I haven't pickled either but I'm pretty sure it's a chemical reaction.
I mean, getting raw fish into lemon juice to make it safe for consumption is defined as cooking it. So perhaps pickling is a kind of cooking?

Ceviche frozen commercially is safer but in a country without Pop-Tarts I find it hard to believe that all fish is frozen properly
