I've seen Cars hundreds of times and have been watching it since I was born.
The question you should be asking is if I can't tell you about it.
Anyways here are just a few tidbits:
-This is pretty obvious but the road that Mac is driving on in the beginning is the road that was made to bypass Route 66. You can see the hills that were cut through to make the road flat. There's a road next to it going over the hills, presumably Route 66.
-When McQueen slides out onto the road, the two cars that swerve around him are the two minivans that wander into Radiator Springs later on in the movie.
-REFLECTIONS OH MY GODS THEY'RE BEAUTIFUL. Particularly on McQueen you can see very sharp and realistic reflections on the metal. One example being you can see Mater in the corner of McQueen's face due to reflections. You can also see the fan turning on Sally. The reflections also deform as the cars move. Just like real reflections.
-One of the fans in the courtrooms isn't running. There's another that is moving very slowly, just like a building that's slowly becoming dilapidated from old age and disuse.
-The spit bubble that Mater's making is very rainbow-y and looks like an oil bubble. Which makes sense. Considering they drink oil and gasoline.
-There's a layer of dust on Doc from the dust cloud McQueen kicks up when he drives off during their race.
-The cirrus clouds are shaped like tire tracks.
-The water animation looks as realistic as it does in recent movies and this movie is from 2006.
-Smoke, dirt, dust, and fire effects are very pleasing to look at, just like the reflections.
-You can tell the difference between dawn and dusk towards the end of the movie. Dusk is much more purple while dawn is pinkish orange.
-Need I say anything about any of the lines in the movie.

I just realized that the tractors are slowly appear in the background watching the movie during the credits scene with the movie clips. The tractors slowly multiply every time it cuts to the audience.
